Quick Oriental Chicken
1 Free range chicken breast skin removed and diced
3 tbs Dark soy sauce
1 tbs of runny honey
1 tbs Sesame oil
Pinch of cayenne
1 tsp Chinese five spice
3 tbs Olive oil
2 spring onions chopped on the diagonal
Red chilli (optional)
Small handful of cashew nuts
1 Cos lettuce
Make the marinade with the soy sauce, honey, sesame oil, five spice and olive oil
Whisk thoroughly to mix and add the diced chicken pieces. Leave for a couple of hours.
Remove chicken from the marinade and sauté until cooked through.
Meanwhile toast the cashew nuts
Shred the lettuce, add the spring onions, cashew nuts and cooked chicken and pour over the reserved marinade. Add the cayenne, seasoning and mix thoroughly.
Serve with a dry rose such as Rioja Tremendus Clarete.
