No chemical are used in the vineyards, the soils are ploughed, the grapes are hand-picked.
50 to 80 years old single vineyard exposed south-east on steep slope of granitic sand. The grapes are harvested fairly late

Yields / Winemaking

The cuvaison lasts for 20 to 25 days (traditional vinification with destemmed grapes). The press wine is added to the rest of the juice for the end of the alcoholic fermentation. The wine is then put in 3 to 5 years old barrels where it spend the next 9/10 months. The bottling is done just before the next harvest.

Tasting Note

This wine is much darker and structured than its baby brother, and while it also have plenty of red (and black) berries, the aromas are much wilder with more minerality and complexity
