A grape used in the Auxerre region to produce the AOC Bourgogne-Aligoté; see the excellent version from Domaine du Corps de Garde (Ghislaine et Jean-Hugues Goisot) - it is a green/gold wine, a touch ‘nerveux’. Ripe and racy, this wine was described by the Guide Hachette as the best Aligoté in the Yonne (and we would consider it a pretty good one in the Hither). Traditionally drunk with jambon persille, equally good with escargots a la bourguignonne.
