Tim’s Hildalgo tasting notes
Especial Fino ‘La Panesa”
Burnished gold, very un-fino like appearance! Delicate nose, salty, winey, complex, almost Chablis-like in it’s briney oyster shell character (think mineral Moreau) if thats not
pushing it too far On the palate textured, slightly medicinal, vinous, very balanced. Very much a wine to drink, in wine sized glasses
Especial Palo Cortado “Marques de Rodil”
Amber gold. Savoury, nutty nose, like salted almonds. Great intensity on palate, brown apple fruit, great power without being heavy Would be a stunning aperitif.
Oloroso Seco “Gobernador”
Pale tawny amber. Nutty, warm, very complex. Fabulous silky texture, expansive and very long on the finish. Would make a superb digestif, almost armagnac-like in both colour and
weight
Especial Amontillado 1874 Viejo ‘El Tresillo”
Amber tawny. Very richly textured, almost chewy and tannic, but with a concentrated “fatness” on the mid-palate. Searingly dry, both on the palate and the finish. Almost too intense, and possibly lacking fruit, after so much age. Difficult to love, not much charm. The Islay malt of the range - approach with caution!
Pedro Ximenez “Vino Dulce Natural”
Pale mahogany brown, not deep for a PX. Wow! Amazing nose, draws you in, sweet dried fruits and chocolate. Simply delicious on the palate, opulent yet amazingly drinkable. I really liked this, possibly the first PX I’ve ever thought was a proper drink and not just fit for pouring over ice cream.Stylistically it’s much more Rutherglen Muscat or Banyuls than classic PX.
